(For freezing)
2 C. fresh basil leaves
˝ C. olive oil
2. Tbs. Pine nuts
2 cloves garlic, peeled
Makes 9 cubes
Place all the ingredients in a food processor or blender and combine in an
on/off sequence until all ingredients are thoroughly blended. Use a rubber
spatula to push food down the sides of the bowl or container. Freeze in an
ice cube tray.
To use:
˝ C. freshly grated Parmesan cheese
2 Tbs. freshly grated Romano cheese
3 Tbs. butter, softened and cut into small cubes
Thaw the pesto. Add the 3 above ingredients and process together.
Serve over pasta.
George’s lazy version
Combine ALL the above ingredients in cuisinart.
Grind them until thoroughly blended.
Freeze in small containers.
To serve-
Thaw and head Pesto container in microwave. It needs to be hot but avoid
overcooking.
Serve immediately over pasta.
Re-freeze the leftover for next time.
