Cuban Garlic Shrimp

 

Serves 6 to 8


Ingredients:

2  pounds medium shrimp
flour
4 tbsp butter
3/4 cup olive oil
10 cloves garlic
1/4 cup dry white wine
1/4 cup clam juice
1 lime
2 tsp salt
1/2 tsp white pepper
cooked white rice

 

Directions:

Season shrimp with salt and white pepper.
Dredge shrimp in flour and set aside.
In heavy pot melt 2 tbsp butter on medium heat.
Once butter is brown, sear 1/2 shrimp.
Transfer shrimp to plate.
Repeat with other half of shrimp.
Heat olive oil over medium heat.
Add garlic and sauté for 3 minutes.
Add wine, clam juice, lime juice, salt, and pepper.
Bring to a boil.
Reduce heat to low, cover, and simmer 20 minutes.
Add shrimp.
Cook 5 minutes.
Serve with white rice.
