This is a classic dish popular in many Hispanic cuisines. It is an easy-to-prepare one pot meal combining rice and chicken with onions and peppers.

Ingredients:

Seasoning salt
Black pepper
3 lb. chicken, cut in pieces
3 tbsp. Olive Oil
1 tsp. Minced Garlic
1 cup diced onion
4 cups chicken broth
2 yellow rice (Vigo)
one bag frozen peas

Directions:

1. Shake seasoning salt and black pepper on chicken pieces.
2. In a large pot, heat oil on medium.
3. Brown minced garlic and onion.
4. Add chicken and cook until brown on both sides.
5. Stir in chicken broth.
6. Raise heat, and bring to a boil.
7. Add the rice and stir.
8. Cover, reduce heat to low
9. Simmer for 25 minutes.
10. Stir in peas and cook 15 minutes.
